Spring pesto flatbread pizza

As mothers, we usually are lucky to get the leftover bites of our kids lunches every day. But once in a while, there is a day where it is calm … and things are working out as you planned. And you are not late for something or remembering you forgot to de-thaw tonight’s dinner…. And you actually get to make a healthy and delicious lunch for yourself. New moms – I know those days seem like they will never come , but they will !

So after my yoga class at the gym (again, one of those rare days where you are actually able to get things done) we swung into our second home – Target – to grab a few groceries . I live on Stonefire brand flatbreads and naan bread . My absolute favorite is to rip up the naan bread into bite-sized pieces and dip it into red pepper hummus !

But I was craving pizza like none-other today so pizza it was ! I threw this flatbread pizza together and was shocked how simple and delicious this was ! I had to share it with you all !

I picked up some flatbread and snacking tomatoes and then used the ingredients I already had.

 Preheat your oven to 425 degrees and pull out your stoneware if you’ve got it ! If not a simple pizza pan would do I’m sure.
Spread an even layer of pesto on the flatbread. I used about two TBS

Next roughly chop up a small handful of greens and sprinkle onto the pesto . I used a baby spinach/spring mix but picked out mainly the baby spinach to put on my pizza.

Next sprinkle about a 1/2 cup of cheese over the greens. I used an Italian cheese mix but regular mozzarella would be delicious as well.
I then added a few halved snacking tomatoes and sprinkled a bit of Parmesan cheese on top then put it in the oven about 10 minutes.

It smells so good and tastes even better !

I sprinkled some more Parmesan cheese on top once I pulled it from the oven …. drool. I ate almost the whole thing to myself I couldn’t stop ! This is such a quick and easy recipe so it is perfect for lunch but of course also great for dinner!  Enjoy!


Spring Pesto Flatbread Pizza

-flatbread of your choice -pre-made pesto -6-8 Snacking tomatoes -1/2 C baby spinach or spring mix -grated parmesan cheese -1/2 C Italian style cheese


1.preheat oven to 425 degrees 2.Spread about 2 TBS of pesto onto flatbread 3.Roughly chop baby spinach and sprinkle over pesto 4.Sprinkle 1/2 C or more of Italian style cheese 5.Halve 6-8 small snacking tomatoes and arrange on pizza 6.Top with grated parmesan cheese 7.Bake for 9-10 minutes on a stoneware pizza pan or cookie sheet 8.After pulling out of the oven sprinkle additional parmesan cheese on top before cutting and serving !
